Michelin-starred Mexican restaurant Kol, the brainchild of visionary chef Santiago Lastra, who has taken the London capital by storm since opening in 2020. Lastra will bring his signature dishes and flavors blending Mexican innovation with Swiss elegance to the luxury hotel in the Alps.
In St Moritz, he will present signature dishes such as his take on Nicoatole, a custard created using an indigenous technique, reimagined with bright yellow pepper and served with crème fraîche, caviar and seasonal flowers. Or the Langoustine Taco (right), inspired by the tacos of Puerto Nuevo, a seaside village in Baja California, featuring chipotle cream in a hand-pressed sourdough tortilla, with sweet lobster head juices injected with sea buckthorn and squeezed over the dish tableside.
“I’m looking forward to cooking in such a historic and quality-conscious hotel and bringing Mexican soul to the Swiss Alps,” says Lastra. “I believe there’s a great brand synergy between Badrutt’s Palace and our ethos at Kol and I’m excited to cook in one of my favorite landscapes – the snowy mountains”.
The two-week residency fits into a global trend of chef pop-ups in other cities and countries, giving local diners a chance to taste their food.
Badrutt’s Palace is no stranger to pop-ups; their carefully curated residences offer exclusive access to some of the world’s most exciting culinary talent while continuing to shine a light on their already impressive in-house chefs.
Recent pop-ups at Badrutt’s Palace include Michelin star Chef Daniel Rose (Le Coucou, New York and La Bourse et La Vie, Paris) as well as 3-Michelin star chef Eric Kragh Vildgaard and wife Tina (Restaurant Jordnær, Copenhagen). On the menu for 2025 is Chef Franco Pepe, of Pepe in Grani, who is bringing his world-renowned pizzas to The Palace in February.
