FCSI’s Food Waste Fundamentals video series, supported by Salvajor, recorded a new episode on Wednesday February 26, 2025, live at The NAFEM Show 2025 in Atlanta, Georgia. The panel addressed the changing attitudes, best practice, and logistics of managing food waste disposal in professional kitchens.
Participants were consultants Doug Huber FCSI of Foodservice Consultants Studio and Joshua Miller of Remarkable Academic Foods, plus Jim Ottmer of Salvajor, while Michael Jones, editorial director, FCSI’s Foodservice Consultant, moderated the session. The video was filmed by The Fuze video team, headed up by FCSI Associate Erik Haviland.
